Khara Boondi

Take abt 1 cup of besan ,add some chili pd,salt ,little turmeric and a pinch of soda.To this add water little at a time and make a dough which is semi thick like dosa batter.Heat oil in a kadai when hot pour the batter on to a perforated spoon or zara( used to make Boondi)and slowly tap the edges so that boondis fall evenly into the oil.fry till crisp .Add some fried Curry leaves and cashewnuts and mix well

Khaman Dhokla

For Dhokla 1 cup besan 11/2 tbsp Rava 1 tbsp ginger green chili paste 1 tbsp sugar 21/2 tbsp oil A pinch of hing 11/2 tsp of Eno fruit salt 3/4 -1 cup water Salt to taste For tempering: 1 tbsp oil 1 tsp mustard Few curry leaves 1-2 green chillies 1 tsp sugar ( optional) 2 tbsp water. Mix all the ingredients listed under Dhokla except Eno to a smooth batter.lastly add the Eno mix well and pour into a greased shallow pan and steam for 15-20 min .check with a toothpick to see if done.allow to cool for 10 min and then unmould it on a plate and carefully cut into squares. In a pan heat the oil add the mustard , when it splutters add the g.chili, curry leaves sugar and water stir well and then pour the tadka over the dhokla.garnish with some  chopped coriander leaves.

Boondi Laddu

Ingredients 2 cups sugar 1 cup water 1and half cups of besan 1heaped tsp of cardamom pd. Few strands of kesar ,oil for frying ,2 tsp of ghee. Yellow food coloring ( optional) In a kadai mix together sugar and water.keep on medium flame and allow to boil till u get one string consistency(very important) .put off flame and add the kesar,cardamom pd.and food color and the ghee. simultaneously in another kadai keep enough oil to fry boondis. Mix besan with enough water to make a thick batter of dropping consistency. Now take a big spoonful of the paste and pour it through a boondi making pan into medium hot oil.take out boondis after 2 min.they should not be crisp.put the boondis into the sugar syrup .keep doing this till all the batter is used up. Keep stirring the boondis in the syrup intermittently.the mix will thicken in 30-40 min and then make laddoos.
